Tomorrow begins a 3 day adventure into the wine, beer, cider, and food of Quebec with the TasteCamp gang of bloggers and writers. Having missed 2012 in Virginia, I glad we could make this year’s edition. I’ll try to blog each day as we go and I’ve set up CoverItLive to capture the Twitter stream from each day, starting with the leadup/travel day for many, which is Thursday.

I’m keen to learn more about what’s been going on in our neighbouring province in terms of the wines and ciders, and the craft beer and food component will just add to the fun.

Wine Chat May 1st: Appassimento Style Wines

May 1st, 2013: Appassimento style wines – Who’s using the process? Why is it popular? Pros & Cons. Not sure what that is? The appassimento process refers to a partial drying of the grape in order to concentrate the flavour and sugars, etc. (what one of my profs would call the “dry extract”).
